A good friend of mine and his family got COVID-19 back in November.  I had lunch with him recently, and he told me how he just started having issues with his taste.  He still has a hard time smelling anything 5 months later, but has a new development with his taste.  In fact, he said he got up in the middle of the night last night, because a "bitter taste" actually woke him up and he had to brush his teeth again just to make it bearable.

My friend also said he's noticed some changes in his smell.  Apparently, his smell seemed to be getting a little bit better.  He was finally able to faintly smell his wife's perfume, but some recent changes has him concerned.  Now, all proteins smell like "rotten flesh" he said.  That's the best way to describe it.  It's affecting what he can eat.  Even the chicken teriyaki salad he ordered for lunch, "Smelled like crap" he said.  Steak, chicken and hamburger especially smells terrible.  As he's eating it, it tastes okay, but he has a very bitter after taste (Proteins). Again, this is a new development.  5 months after his recovery.  He has no other COVID symptoms.

So, I decided to do some digging on the subject and it appears he's not alone.  I found a few articles, that indeed say that COVID-19 can give you a bitter taste in your mouth or a metallic like taste.  However, I couldn't find any articles that showed it happening to people well after they had made their recovery from COVID-19.  According to an article on Healthline, "COVID-19 side effects due include bitter taste in the mouth or even dry mouth."

It's obvious, since we're only one year into this disease, there's still much learn.  If you've had side effects similar to this with your taste, please comment below.  My friend is still searching for answers.
